How do we make our pizza bases?
Every day, we prepare a unique fresh pizza dough that stands out thanks to the use of 100% authentic biga (a type of pre-ferment) created by Italian master baker Piergiorgio Giorilli. The dough is then allowed to rise and mature for at least 36 hours at a controlled temperature.
After enjoying a good espresso, we hand-stretch each base and bake it at 400°C, following Neapolitan guidelines. This process creates a unique, light, and crispy texture, while the carefully selected Italian flour delivers the authentic taste of Naples.
