After the great success of our basic pizza workshop, we’re introducing the Advanced Pizza Chef Course .
An intensive two-day advanced training course from 5:30 PM to 9:00 PM for anyone who doesn’t just want to learn how to make pizza, but truly understand and master it .
This course takes place at our location in Strijen and is specially designed for participants with a good basic knowledge of pizza making who want to take the next step towards a professional level.

The course is taught in the evenings and can therefore easily be combined with work or other commitments.
During these two intensive evenings we will cover both theory and practice , with plenty of personal guidance and hands-on work.
Working with professional dough machines
Making dough by hand and understanding dough development
Working with biga and poolish
Short and long fermentations
Learn to work with professional dough formulas as used in pizzerias to guarantee consistent quality and reproducibility
You will learn how to adapt recipes to:
Temperature
Time
Hydration
Production volume
Low hydration levels
High hydration levels up to 75% water
Application for pizza napoletana classic and napoletana contemporanea and focaccia
Workability, airiness and baking result
Authentic technique of stretching bottoms with the hands
Extensive explanation and demonstration of the Neapolitan clap and exercises.
Retention of air in the edge
Recognizing and correcting common mistakes
Working with different ovens
Heat zones and timing
Rotating technique with the pizza peel
Control and workflow like in a professional pizzeria
